    To Go. Born from an experimental fermentation project, Thribble Currant is a truly unique American sour ale. It’s produced by taking our Brother David’s Triple wort from the kettle and adding it to wine barrels to ferment with our Horse Tongue Wheat sour culture. That’s right: no brewer’s yeast or stainless steel here; it’s 100% barrel-fermented with wild yeast and bacteria. After primary fermentation has ended (several months or more), a healthy dose of black currants is added, providing natural sugars to encourage additional fermentation. It will spend upwards of a year or more in the barrel until it has matured and reached the perfect balance of sourness and complexity. The resulting beer is a deep burgundy color with a bracing sourness and subtle sweetness with hints of oak, dark fruit, and wild berry.

    71lbs of high alpha hops were used to make this beer. That's just over 20 grams of hops used for each pint! DBH was brewed with 2 row barley, Carapils and Crisp Crystal 45 malts and fermented to 7% alc/vol. DBH was hopped with 5 different West Coast hops: Chinook, Columbus, Simcoe, Centennial and Cascade. Additionally, DBH was twice dry hopped with different combinations of these hops. The net result is an amazing aroma of ripe juicy fruit mixed in with a bouquet of spring flowers. DBH was brewed to a level of bitterness of 108 IBU's, and leaves a lingering bitterness; it is, after all, a double IPA!

    We’ve made a hell of a lot of beers since 1996. Probably thousands at this point. Occasionally stars, planets and brewing schedules align and we bring back one of these ephemeral creations. In fallof 2014 we created a draft-only version of this delicious double India pale ale. Its bitter, zesty grapefruit peel infusion created a bright accent to flavors of pine resin and fresh citrus well in advance of the explosionof fruited beers we’re all reveling in atthe moment. We never stopped thinking about it, so a long five years later, we’re bringing back Stone Grapefruit Slam IPA for round two. It’s a link to the past planted delightfully in the present.

    This was a collaboration brew with Birds Fly South. We used 30lbs of spruce tips on the hot side in the brew kettle and used just a little bit of Centennial and Chinook to get some IBU's. You will get a slight haze from a little bit of flaked oats we used in the malt bill. We let this beer free ride during fermentation, starting at 72 degrees and rose to 83 degrees. Flavors you get are lemon, grass, and light citrus.
